Leek Part 2

Some more health benefits which leek possesses are that it reduces bad cholesterol, raises good cholesterol, helps keeping down high blood pressure, protects against colon, prostate and ovarian cancer, and can boost the immune system. The last is a great benefit in the fight against inflammations.

You can get all these health benefits by consuming leeks at least two times a week and preferably even more often then that.

Leeks are available in stores throughout the year and when buying them, look for the firm and straight ones with dark green leaves and white necks. They stay fresh in the fridge for about one to two weeks if you store them unwashed, uncut and loosely wrapped in a plastic bag.

You can blanch the not too thick cut leeks for 2 to 3 minutes and freeze them. This will keep them for about three months, but they may have lost some of their flavor. Once cooked, it is best to consume them within two days.

Leeks can be boiled, fried, or eaten raw and there are many recipes which you can easily find online or in cookbooks, but a word of caution is in order for when you are struggling with kidney and/or gall bladder problems.

If that is the case, you would do better to eat it occasionally. Leek contains quite some oxalates and when those become too concentrated they can cause crystallization of the bodily fluids which can lead to health problems.

You may want to keep that in mind, especially with the upcoming Holidays. There is plenty of other food around which would be a good alternative.

However, lets keep in mind the real reasons for the Holidays! :-)
